Terroir: Chocolate Soil
I love this stuff! When I'm creating a new dessert, my first questions after tasting it are: "Is it too sweet?" And "Does it eat well, does my mouth want anything else?" Soil is often the answer. Deep dark cocoa flavor, sweet but not cloying, a nice punch of salt and texture, texture, texture. Especially good on cold, creamy things like the panna cotta pictured. Again, I love this stuff!
Ingredients: cocoa powder, sugar, flour, butter, puffed rice cereal, bittersweet chocolate, feuilletine, salt.
